  • ½ – ⅔ cup roasted red bell pepper (diced)
  • 2 tablespoons olive oil
  • ¼ cup fresh parsley (chopped)
  • 2 cloves garlic (pressed or minced)
  • Salt & pepper to taste
  • Optional topping: grated Parmesan cheese for serving
